Carrots: When they are ½” to 1” in diameter, carrots can safely be pulled. The size will vary depending on the variety, but this range should be correct for most of them.

Cabbage: Harvest the cabbage while the head is still firm all the way through when squeezed. It doesn’t matter how large or small the head is; each head grows at a different rate. Avoid waiting until the head splits, as this means it’s been sitting ripe for too long and has excess water uptake.

Corn: There are only 72 hours when corn is at it’s prime quality for eating, so it’s important to catch it when the kernels are plump and milky. The silks should be brown and dry, and it’s best to harvest corn early in the morning.

Peppers: When they’re about the size of a baseball and shiny green, it’s time to pick the peppers. They will still be good when they turn red or yellow.

Onions: When the tops begin to turn brown and fall over, it’s time to pull them up and shake off the soil. Lay them out to dry for a few days, then cut off the tops and store in a cool, dry place.
